White tea is renowned for its high levels of anti-oxidants. So called as the leaves are picked before they are open fully, when the buds have a silvery white appearance, hence the name "white" tea.

White tea leaves are harvested at a younger age than the green tea leaves. They both undergo very little processing. However while both types are hardly processed, the leaves destined to be sold as white tea undergo even less processing than green tea leaves. Instead of air-drying and steaming, the unwithered leaves are merely steamed taking on the appearance of being gently folded.

Tea leaves so close to their natural state are thought to contain more polyphenols, the powerful anti-oxidant.
